Porabari chomchom is a town brand. Bogura mishti doi is a town brand. Dhaka’s old houses in Old Dhaka still send out trays of roshogolla for guests. Winter is nolen gur season, when sandesh and doi taste like smoke and sap instead of white sugar. That calendar is the difference between a generic ‘Bengali sweet’ paragraph and actually being here.
The other half is street heat
