The street is the snack aisle
Bangkok does not wait for you to sit. Grilled squid, roti with condensed milk, and fruit with chile-salt are eaten over a bag. Mango sticky rice is real and also a tourist magnet; the local everyday is often something smaller and saltier.
7-Eleven is a second cuisine
Thailand’s convenience stores are a snack laboratory: pork floss bread, jelly cups, dried mango, and limited chips. Overnight workers eat there. Travelers should too, if they want the actual modern habit rather than only the night market.
Coconut and egg yolk
The old dessert set — thong yod, foi thong, khanom chan — is coconut milk and egg yolk turned into gold. It still appears at ceremonies. Pandan is the green perfume, not vanilla.
How people snack
Fruit in the heat. Fried cakes in the evening. Something sweet-salty from 7-Eleven on the way home. Chile-sugar-salt on green mango is a whole food group. Pack dried mango; eat the sticky rice the same hour you buy it.
