Halwa is the calling card
A Bahraini house still puts a plate of halwa next to tiny cups of gahwa. The texture is closer to a fragrant jelly than to Indian karachi halwa. Shops in Manama sell it by the tin in colors that look ceremonial. You eat a small square, not a bowl.
Luqaimat belong to Ramadan evenings and to hotels that fry them too early. Khanfaroosh is the older fried cake, cardamom-heavy, from Muharraq kitchens. Dates fill the gaps between pastry moments. Bring a sealed halwa tin and a box of khalas. Luqaimat die in an hour.
