Elbasan owns one cookie

Ballokume is not ‘an Albanian biscuit.’ It is Elbasan’s biscuit, tied to Dita e Veres on 14 March, made with corn flour and enough butter to keep for days in a coat pocket. Other towns make baklava and kadaif; they do not get to claim ballokume.

Gliko is the ritual that surprises visitors. A host presents a spoon of walnut or cherry in syrup, a glass of water, and silence for two bites. Petulla belong to weekend mornings and beach kiosks. If you buy one thing to travel, make it a tin of ballokume or a sealed jar of gliko, not a syrup pastry that will weep in a suitcase.
