Goûter is a scheduled snack
Children get an official 4 p.m. meal: pain au chocolat, bread and chocolate, or a yogurt. Adults steal the same idea with a pastry on the way home. France did not invent snacking, but it did give it a name and a time of day so nobody has to pretend they are having dinner.
Butter is the national seasoning
Croissants, palmiers, kouign-amann in Brittany, and salted-butter caramels all start from the same dairy. If a French snack is famous, ask whether butter is doing the work. Often yes. Dark chocolate is the other pole — eaten in squares, not fun-size bars.
Regional boxes beat airport perfume
Calissons from Aix, nougat from Montélimar, caramels from Quiberon, berlingots from Carpentras. These are the sweets that still feel like a place. A supermarket tablet of dark chocolate is excellent and not the same as a regional tin.
How people snack
On foot, from a paper bag, crumbs on a scarf. Apéro later: olives, gougères, saucisson. The candy aisle exists — Carambar, Malabars, Haribo — but the cultural center of gravity is still the bakery, not the checkout display.
