Snacks from Uganda

Ugandan snacking is a Rolex, an omelette rolled in chapati with cabbage, sold from street pans in Kampala. Mandazi. Gonja, roasted plantain. Muchomo grilled meat. Nsenene grasshoppers in season. This is an egg-chapati roll, not a Kenyan mandazi paragraph, and not a burrito joke — the name is local and the pan is the point.

What to try first

A Rolex stall is Kampala: chapati, egg, cabbage, a roll in paper. It is not a Mexican burrito and not a Kenyan chapati copy. Gonja is plantain on coals. Muchomo is meat. Nsenene, when in season, are fried grasshoppers, a snack with a calendar.

Mandazi is the tea dough. Pack nothing fried.
